Easy Gluten-Free Oat Flour Pretzels with Honey Mustard Dipping Sauce

Have you ever avoided making something because you assumed it would be difficult but then you finally give in & realize it’s actually super easy and WHY THE HECK have you been avoiding making such a delicious thing for so darn long?!?!?!

Yeah. We hear that and this one is for you. You CAN in fact have big, yummy, fluffy, gluten free pretzels easily AND without yeast (we used dairy-free yogurt instead)!
.
Great for a fun after-school or sports snack, make extra batches and freeze them for later!


Easy Gluten-Free Oat Flour Pretzels with Honey Mustard Dipping Sauce
              

Makes: 10 small-medium pretzels


Ingredients:
Pretzels:
4.5 cups oat flour
¼ cup tapioca starch or arrowroot starch
1 tbsp cornstarch
1 tbsp baking powder
½ tsp PRI Fine Sea Salt
2 tbsp PRI Manuka Blend or 5+ Honey
½ cup unsweetened coconut yogurt
1 ½ cups water (warm to the touch)
¼ cup baking soda (for the bath)
5 cups water

Toppings:
Egg wash (1 egg yolk + 1 tbsp water)
PRI Flaky Sea Salt

Instructions:
Preheat the oven to 425ºF, and line your baking sheet with a silpat mat or parchment paper.
In a large bowl, whisk together your dry ingredients: oat flour, tapioca or arrowroot, baking powder, cornstarch and sea salt.
Next, pour the dry mixture into a stand mixer with the dough hook attachment.
Pour in the warm water and turn it on low speed.
Slowly add in the manuka honey, let it mix for a few seconds and then very slowly add in the coconut yogurt, increase the speed to medium.
The dough should start to come together and resemble a yeasty dough. If it’s too wet add 1 tbsp of oat flour at a time, if it’s too dry add in 1 tbsp of water at a time.
Once the dough is formed into a ball. Let the dough sit for 5 minutes. While doing this, bring 5 cups of water and ¼ cup of baking soda to a boil.
Slice the dough into 8 sections, roll each section in a long rope and then form a horseshoe shape, cross the ends over the other and make a loop, then twist the ends again and loop up to create a pretzel shape. Complete until you have all your pretzels shaped.
Next, once the baking soda bath has started to boil drop in 1-2 pretzels at a time with a spatula with holes. Cook each pretzel until it starts to look brown 1-2 minutes, you can flip if you’d like for an even bake and coating.
Continue until all the pretzels have soaked in the baking soda bath and transfer them to the prepared baking sheet.
Create an egg wash but combine 1 egg yolk with 1 tbsp water, and brush it on. Top with PRI Flaky Sea Salt. Bake for 18-20 minutes or until golden brown.
Once golden brown, remove from the oven and let cool before serving with honey mustard dipping sauce. Feel free to add more salt if preferred at this point. Store in an air-tight container or ziplock bag.

Honey Mustard Dipping Sauce

Ingredients:
⅓ cup dijon mustard (with or without seeds)
3 tbsp PRI Manuka Honey
¼ cup mayo (dairy free works great too!)
1 tbsp yellow mustard
1 tbsp lemon juice
¼ tsp chili powder (optional)

Instructions:
Mix the dijon mustard with the honey and vegan mayo. Stir until well combined.
Next, add in yellow mustard, the lemon juice and optional chili powder.
If your dijon mustard has seeds, throw it in a high speed mixer and blend until more smooth.
Pour into a sauce dish and dip your pretzels in! Enjoy!

Manuka honey is a wonderful addition to homemade skincare products! It draws moisture to the skin which helps keep skin hydrated. Hydration is one of our best defenses against the signs of aging. 

Additionally, manuka boasts a powerful dose of antibacterial properties and is helpful in fighting free-radicals, which cause damage to skin. (Source)

To incorporate manuka into your daily regimine, try the following 3-step DIY manuka skincare routine: 

1 - Manuka Cleanser

Cleansing the skin with manuka honey really requires nothing more than massaging manuka honey into damp skin, then washing off with warm water. That said, adding a drop of essential oil such as lavender or manuka can add a vibrant scent as well as some extra skin benefits. 

To cleanse the skin with manuka

Tip: manuka honey also works well as a face mask. Simply massage into the sakin and leave for 5-10 minutes before washing off with warm water. 


2 - Manuka Facial Toner 

Applying a facial toner after cleansing the skin is helpful in removing any remaining dirt or residue and also aids in closing the pores and restoring the skin’s natural pH balance. It’s also a great way to prepare the skin to receive moisture and hydration from moisturizer (which you will apply in the next step). 

The following simple DIY toner uses manuka oil which is an essential oil created through the steam distillation of the leaves, twigs, and branch ends of the Manuka tree. 

With a wide range of antifungal activity, manuka oil is often utilized for antibacterial and anti-inflammatory purposes (Source). It’s perfect for use in skincare routines as it helps skin stay clear and fight bacteria that may cause blemishes. 

Ingredients

⅛ cup Witch Hazel 

10 drops PRI 80% Manuka oil 

5 drops lavender essential oil

Directions

Mix all ingredients in a small glass bottle. Close tightly with lid and shake to blend. 

Apply a small amount of toner to a cotton pad and gently wipe over damp skin. 


3 - Moisturizing Manuka Facial Spray

This moisturizing facial spray combines honey, water or hydrosol, and aloe vera to provide hydration. Use as part of your daily skin care routine or spritz on the face any time skin feels dry. 

Only make a small amount of this product and keep in the fridge as it doesn’t have a preservative. If you’d like to keep outside the fridge or for a longer period of time, add a natural preservative such as Leucidal liquid according to the manufacturer's directions. 


Ingredients

½ cup distilled water or hydrosol of choice (such as lavender or chamomile hydrosol)

1 ½ Tablespoons PRI Manuka honey

1 ½ Tablespoons aloe vera gel


Directions

Place all ingredients in a small bowl or glass measuring cup and stir until well combined. 


Pour into a glass spray bottle and close with lid. 


Spritz on the skin after cleansing and toning or any time skin begins to feel overly dry.

The dog days of summer are officially here 🥵. Whether you are keeping cool by the pool or crowded around the air conditioner, keeping hydrated is key. Especially if pool time involves margaritas 😉 

We love a good electrolyte drink to keep us in tip top shape but what we don’t need are unnecessary artificial dyes and ingredients…yuck! Thus, we took one of our favorite flavors and gave it an upgrade which, of course, we just had to share with you!

You might ask: why are electrolytes important anyway and how do they work? Well, electrolytes play a critical role in balancing your body’s pH and in moving nutrients to your cells. They also help balance the water level in your body and regulate your heartbeat. (1)

When you are low on electrolytes you can experience all sorts of issues like blood clots and muscle contractions. Luckily it’s so easy to avoid by simply drinking enough water and incorporating this drink into your summer routine! (2)

Pro tip: if you don’t like fruit punch, you can make it with any juice you prefer. Citrus is also a very refreshing choice! 

Recipe: 

1-2 Servings

Ingredients:

  • 2 Cups Filtered Water
  • 1 Tbsp Manuka Honey
  • ½ Cup White Grape Juice
  • ¼ Cup Apple Juice
  • ¼ Cup Concord Grape Juice
  • 2 Tbsp Orange Juice
  • 1 Tbsp Pineapple Juice
  • ½ Tsp PRI Fine Sea Salt
  • ½ Tsp Beet Powder (Optional; For Color)

Instructions:

  1. Add 2 cups of water to a large mason jar. Then add in 1 tbsp of manuka honey.  Secure the lid and shake well until the honey is mixed into the water. The liquid should be yellow in color.
  2. Remove the lid and add white grape juice, apple juice, concord grape juice, orange juice and pineapple juice. Next, add in sea salt. If you prefer it less salty add ¼ tsp at a time of sea salt.
  3. Secure the lid and shake well. If you want the color to be a more true red like classic electrolyte drinks add in ½ tsp of beet powder for color. Optional, but recommended!
  4. Shake well and enjoy by itself or served over ice!

Fruit Salad Spring Rolls with Lemon Honey Tahini Sauce

Have you ever made your own spring rolls? If not, you are missing out on an easy & delicious meal perfect for those hot summer days! 


If you have kids, they’ll enjoy helping you put the fruit in the wraps and measuring the sauce ingredients. 


You’ll notice that we used both our Lemon Twist Manuka and  Leatherwood Honeys. Of course, you can use standard manuka but we 100% guarantee the Leatherwood Honey takes these flavors to a whole other level. We seriously haven’t found a fruit yet that we wouldn’t put some Leatherwood on! 


Find the spring roll wrappers at your local Asian or natural grocer & even at some bigger retailers. Most of the packages also have diagrams showing how to wrap them, which is great for beginners!

 

Fruit Salad Spring Rolls with Lemon Honey Tahini Sauce
Yields: 6-8 spring rolls

Ingredients:

Lemon Honey Tahini Sauce

  • ¼ cup tahini (⅓ for runnier tahini) 
  • 3 tbsp coconut yogurt
  • 2 tbsp PRI Lemon Twist Manuka Honey
  • Juice of ½ a lemon 

Fruit Salad Spring Rolls

  • 2 cups strawberries (sliced in quarters)
  • ½ cup pineapple pieces 
  • ½ cup blueberries 
  • ⅓  cup raspberries 
  • 1-2 sliced peaches 
  • ¼ cup Leatherwood Manuka Honey 
  • 1 package Spring Roll Papers

Instructions:

  1. Slice and prepare the fruit. Place it in a container that has a fitting lid. Pour in the Leatherwood Manuka Honey, put the top on and shake until the honey is incorporated over the fruit mixture. Add more honey as needed. Refrigerate the fruit while making the lemon honey tahini. 
  2. In a food processor combine: tahini, coconut yogurt, Lemon Twist Manuka Honey, and juice of half a lemon. Blend until well mixed. The mixture shouldn’t separate, but should be creamy and smooth. Pour in a small sauce dish. 
  3. Remove the fruit salad from the fridge and drain the excess liquid from the container. Spring Roll Assembly: Wet your spring roll paper in warm water, transfer to a plate and put in your fruit filling in a line at the edge closest to you. Roll upward, tuck in the sides and keep rolling. Continue until done. Serve with the lemon tahini sauce and enjoy!

Why does your face break out more during the holidays? 

It’s annoying, frustrating, and, well, a little bit our own faults - helloooo cookies! But here’s the thing - you should TOTALLY eat those cookies. There are many contributing factors as to why most people experience more inflammation and acne in the winter and, especially, during the winter holidays and most are external factors that can be naturally managed or even prevented entirely. 

One of the main reasons is simply that your skin produces more sebum in the dry winter weather. What is sebum you ask? Sebum is oil your skin glands produce and, while they help to keep your skin soft & supple they sometimes overproduce causing the cells to stick together and clog your pores.

Most sebum glands reside in the infamous “T-zone” aka your forehead, nose, and chin. The dryer it is, the more sebum your skin produces. 


Add to this the other factors that come along during the holidays such as:

  • Increased stress
  • Traveling to different climates 
  • Eating far more sugary treats
  • A less routine skincare regime
  • Heavier make-up use 

Remember: Trying to overly restrict your diet can oftentimes lead to increased stress. Instead, go for balance, give yourself a little grace, and use manuka honey to help decrease the chance of breakouts and easily, naturally, treat any pimples that do arise. 


Here are a couple of ways you can help stop or reduce holiday breakouts before they start:

  • Add 1/2 tsp of manuka honey to your face wash OR use the honey alone to wash
  • Gently exfoliate 1-2x week using the honey tapping method to clear pores

If you do get any breakouts, help them disappear faster by:

  • Spot treating the pimple. Simply dab a small amount of manuka (with clean hands) on the pimple and allow it to dry.
  • Manuka honey face mask. Apply a thin layer of manuka to clean skin and allow to sit for 15-20 minutes. Simply rinse or use a damp soft cloth to remove.

Holiday Sugar Cookies

Holiday Sugar Cookies

Grab your favorite Holiday cookie cutters and get baking! This classic sugar cookie recipe will be your go to any time you need to bake some delicious sugar cookies for decorating. I make these for my family holiday party every year and all the kids decorate them.  

INGREDIENTS

COOKIES:

  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon Fine New Zealand Sea Salt
  • 3/4 cup superfine sugar
  • 1 1/2 sticks (3/4 cup) unsalted butter, cut into small pieces, at room temperature
  • 1 large egg, lightly beaten
  • 1 teaspoon pure vanilla extract

ROYAL ICING:

  • 4 cups confectioners’ sugar
  • 1/4 cup meringue powder
  • Food coloring (optional)
  • Decorating sugar, for topping (optional)
  • Your favorite sprinkles (optional)

DIRECTIONS

  1. For the cookies: Whisk together the flour, baking powder and salt in a small bowl.
  2. Beat the superfine sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.
  3. Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  4. Let the dough sit at room temperature for a few minutes to make rolling easier. Roll out 1 disc of dough at a time between 2 pieces of parchment paper until 1/8 inch thick. Cut out shapes with cookie cutters and arrange about 2 inches apart on the prepared baking sheets.
  5. Bake until the cookies are golden brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheets until firm enough to transfer to a wire rack; let cool completely.
  6. Gently gather any scraps of dough into a ball and press into a disc; wrap in plastic wrap and refrigerate the disc until firm enough to roll,about 1 hour. Cut out as many cookies as possible and bake.
  7. For the royal icing: Beat the confectioners’ sugar, meringue powder and 1/3 cup water with an electric mixer on medium-high speed in a large bowl until stiff peaks form. Beat in the food coloring if using. (The icing can be stored in an airtight container at room temperature for up to 2 days.)
  • Decorate the cookies with the icing; top with decorating sugar and sprinkles if using.

COOK’S NOTE

When measuring flour,we spoon it into a dry measuring cup and level off the excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)

Honey Candied Orange Peels

This recipe is a little more time consuming than our usual, but it’s just too good not to share, plus it’s not technically difficult and it only has three ingredients, one of which is optional!

Our Honey Candied Orange Peels may be a little different from the ones you’re used to. The honey gives them more of a jelly texture vs the dryer texture you get when candying with sugar but many who try them say they prefer a softer texture.  

For these, we used our Leatherwood Honey. Leatherwood Honey is considered to be one of the rarest honeys in the world. The Leatherwood tree is mostly found in remote areas of Tasmania and takes 80-100 YEARS to flower! 

Technically, you could use any of our honey for these candied peels but if you have never tried Leatherwood it is definitely an experience and, especially for its rarity, is quite reasonably priced. We put it on ALL the fruits!

We finished these by dipping them in melted Raspberry Manuka Chocolates. This part is optional…though your taste buds may disagree.

Ingredients:

Instructions:

  1. Place parchment paper on a baking sheet and set aside.
  2. Fill a medium saucepan with water and bring to a boil. 
  3. Peel the oranges by slicing the sides off, and then scoring the skin to easily remove it in larger pieces. Be careful when removing the skin so you can have nice long pieces of orange peels.
  4. Place the orange peels into the saucepan and boil for 8 minutes. Then remove the orange peels with a large spoon, keeping the water in the saucepan. 
  5. Use a paring knife to remove the skin from the orange peel. You should be able to see no white stuff on the orange peel.
  6. Then cut the peels into ¼ inch strips.
  7. Bring the water back to a boil and boil for 8-10 more minutes. Then drain using a strainer and set aside.
  8. In the sauce pan, combine 1 cup of leatherwood honey with 1 cup of water on high heat.
  9. After a few minutes the mixture should start to boil and bubble up. Then lower the heat to medium and cook for a  few more minutes, after a few more minutes place the heat on low and simmer until you have a syrup. The syrup should be sticky and not watery.
  10. Next, add in the orange peels and simmer on low heat for 30-40 minutes, while stirring periodically so the syrup or orange peels doesn’t burn. Once the oranges are translucent it’s time to remove them.
  11. Place the orange peels on the parchment paper and let them dry overnight. Keep the remaining honey orange syrup for cocktails or to use as jam.
  12. Then enjoy! 
  13. An option but recommended step is to dip the candied orange peels in chocolate. Melt PRI Raspberry Manuka Honey Chocolate Patties in a double boiler and dip the end of each orange peel into the chocolate. Then let the chocolate sit in the fridge and enjoy the raspberry orange honey combo! 
  14. Store in an airtight container in the fridge.
