The Southern Rata tree flowers sporadically — sometimes not at all for years at a time. When it does, it covers the remote West Coast forest in brilliant red. The honey from those flowers is unlike anything else from New Zealand.

Lindsay Feary keeps bees in Otira Gorge high in Arthur’s Pass, deep in the Southern Alps of the South Island. The landscape is wild, the honey is rare, and the flavour is unlike Manuka or most other New Zealand honeys — light in colour, delicate, floral, with a gentleness that surprises people who expect something stronger.
